comfort food

Had a dental appt today. Been numb all day. Went to my favorite easy SOFT comfort food.
Recipe as follows:
thin spagetti cooked
pesto
sun dried tomatoes
goat cheese
black pepper
mix together to melt. I feel better already !

Fall Hash

Hash is one my favorite go to Sunday breakfast. And great leftovers. I discovered it on accident. I went to a You-Pick-Em farm in Palmer and bought what I thought was lots of white radishes. Turns out they were turnips. Oopsie. Had to get creative with turnips. (PS turnip fries are a bad idea)
Common items found in my hash:
  • red or yellow potato
  • onion- cut thick
  • sweet potato
  • butternut squash or any variety
  • parsnip
  • turnip
  • zucchini
Or any combination. Try parsnips and turnips. Really. He couldn't even tell! Use a peeler and take off the outer edge of all veggies. Cut into one inch pieces. Size reduces significantly upon baking so bigger is better. Toss cubes with olive oil. Salt and pepper and spread out on baking sheet. 425 degrees for 45 min. Half way thru I usually toss again. Here is when you can add items that would usually burn at long baking temps. I use what I have, but have found fresh herbs are best.
  • shallots 
  • garlic
  • sage
  • thyme
  • parsley
Serve with over easy eggs. And sausage. Or bacon. Oh man, I love breakfast.....
